  • Fermentation:Handcrafted through a natural process, the production of Primo Aperitivo begins with raw materials such as botanicals, citrus, and 96% ABV grain spirit, all sourced from local suppliers. These ingredients are then transported to the production facility located in the Doctores neighborhood of Mexico City. The process is supervised by Andrés Valverde, a seasoned expert in Mexican spirits. The distillery team starts by removing the pith from the citrus peels, primarily grapefruit, before weighing and preparing the remaining ingredients for maceration. The ingredients are macerated in a stainless steel vat with neutral grain spirit, which is diluted to 50% ABV. This initiates a 7-day process during which the alcohol extracts flaor and aroma from the active ingredients and essential oils. The maceration is filtered to remove any sediment. To blend and sweeten the mixture, agave nectar and water are added to reduce the alcohol by volume (ABV) from 50% to 18%.
