Organic, dry-farmed Carignan and organic Zinfandel were hand-picked in Mendocino. 40% of the grapes were destemmed and 60% were left whole cluster for a 10-day semicarbonic maceration in tank. Primary fermentation was native and both varietals were co-fermented. The wine was sur lie aged in neutral French oak barrels for a little over 4 months before being racked off the lees for bottling during a new moon’s week. <25 ppm of sulfur was added.
The name Chaand means “Moon” in Hindi. It is a reflection of the changing nature of this wine as each vintage will be a new co-ferment.
