Illahe is a family owned grower producer in the southern end of the Willamette Valley. With a focus on sustainability, dry farming, and gentle winemaking, proprietors Brad and Bethany Ford are making expressive, lively wines with minimal intervention.
The fruit for the 2023 Cuvee Miette was hand harvested and basket pressed for extremely gentle extractions The wine was fermented 20% whole cluster with native yeast before being aged for 11 months in French oak barrels (10% new). The wine is bright and savory with brilliant aromatics.
