Cabernet Sauvignon "No.9" Napa Valley - 2022

The Wonderland Project was founded in 2010 by former sommelier Matt Ahern. The Wonderland Project produces Chardonnay and Pinot Noir from Sonoma and Cabernet Sauvignon from the Atlas Peak AVA in the Napa Valley. The vineyards that Matt works with are farmed organically. The 2022 Cabernet Sauvignon comes from a west-facing slope on the northern ridge of the Atlas Peak AVA in the Napa Valley. These vines are planted on well drained red volcanic soils, well above the fog line. The grapes were hand harvested, destemmed, and fermented with native yeast in stainless steel tanks. The wine was pressed off into French oak barrels (30% new) and aged for 18 months. This wine is un-fined and unfiltered. This bottling of Cabernet Sauvignon has lovely fruit balanced by a savory edge.
