Sancerre - 2023

This Sauvignon Blanc from Sancerre is a beautifully balanced expression of the region, made from a blend of wines sourced from vineyards with two distinct soil types: terres blanches (clay-limestone) and caillottes (stony limestone). The terres blanches bring structure and a smooth, rounded texture, while the caillottes lend bright fruit character and aromatic lift.

After gentle pressing, the juice rests for 24 to 48 hours before fermenting in temperature-controlled stainless steel tanks at 57–64°F. Every step of the process is carefully monitored to ensure purity and balance. The wine is aged on its fine lees until just before bottling, which adds richness and depth while keeping sulfur use to a minimum. Instead of traditional fining, a small amount of bentonite is added to naturally stabilize the wine. It then undergoes cold stabilization, gentle filtration, and is bottled.

Pale yellow with hints of gold, this Sancerre opens with an elegant nose full of citrus and tropical fruit aromas. On the palate, it’s crisp and vibrant, showing ripe Sauvignon Blanc character with layered fruit, bright acidity, and a clean, mineral-driven finish that lingers beautifully.
