One would be hard pressed to find a better value in the Grand Crus of the Cote des Blancs in Champagne than 'Les Quatre Terroirs' from Champagne Pertois-Moriset. Sourced from their considerable holdings in the villages of Chouilly, Cramant, Oger, and Le Mesnil-sur-Oger, and vinified in a combination of stainless steel and neutral oak, this is a textbook example of Chardonnay at its most elegant. Following 10 months of primary fermentation, winemaker Vincent Bauchet ages the wine a minimum of 3 years on the lees before disgorgement. The resulting wine is redolent with crisp apricot and yellow citrus and the finish is long and fine. What impresses most is the sense of delicate salinity here, from the chalky soils that make Champagne unique.
