About Pierre Bories

Pierre Bories tends to 10 hectares of vineyards nestled in the picturesque hills of Corbières, Languedoc. While the winery itself is situated in Fabrezan, near the charming city of Carcassonne. Certified Organic since 2003, these vineyards are embraced by the garigue, a region characterized by dry scrub vegetation, set against stunning south-facing slopes. Pierre employs the 'goblet' pruning technique, fostering a dense canopy of leaves that shield the grapes from the harsh sun, allowing the clusters to mature in the cool shade while retaining their natural acidity. Embracing early harvesting, Pierre aims to craft wines that are crisp and delicately extracted from this arid and warm locale.

Vinification is a process entrusted to the grapes' inherent vitality. Spontaneous fermentation occurs naturally without any additives, save for a hint of SO2 added during bottling to ensure precision, totaling under 30ppm. Reflecting the wines' distinct character, the labels are artfully illustrated by Hippolyte, Pierre's son who lends his name to this cuvée.
