The wine was produced using traditional winemaking techniques, including fermentation with indigenous yeast, extended maceration, and aging in 66% new French oak barrels. The resulting wine has a deep purple color and a concentrated nose of black plum, dark forest fruit, and graphite. On the palate, the wine is opulent with a broad, silky texture and soft, chalky tannins. Flavors include cedar, blackberry confit, and a hint of black olive, leading to a lengthy finish.

  • Fermentation:The grapes were de-stemmed and crushed, then transferred by gravity to stainless steel fermentation tanks. After a cold soak, the must was allowed to ferment with indigenous yeast. Post-fermentation, the new wine stayed on the grape skins for an extended maceration to develop mouthfeel and structure. The wine was pressed off 31 days after it went into tank. Malolactic fermentation was left to complete indigenously.
