Kevin took 1/3 of his 2007 vintage of Charles Heintz Chardonnay, hard bunged 2 barrels and left them in the corner of his cellar for 5 ½ years. In the winter of 2012, Kevin opened the barrels to find one of the most unique and dynamic wines produced in California. No topping and no surface flor was created. When the head space evaporated, it created a vacuum that protected the wine from flor yeasts and oxygen. The delicate oxidative notes are from the slow and stable aging. This process was repeated in 2010 to yield the current vintage available.
