Planted in 1982, the Jurassic Park Vineyard is one of the oldest on the Central Coast. The vines were planted on its own roots in deep sandy hillside soils. Vine age, well drained soils and sustainable farming all contribute to the richness of this Chenin.
The fruit was picked in the early morning hours to preserve freshness and to minimize phenolic uptake. The fruit was destemmed, crushed and pressed to tank where it was left to settle at 45F for three days after which it was racked and fermented cold in stainless steel. The wine was left on the lees for four months to build mouth feel and texture..
