The Les Groslocaux comes from vineyards of moderate temperatures. There are mild, raining winters and relatively cool summers. The entire cuvée comprises 53 hectoliters that go to concrete vat where maceration continues at room temperature with no pigeage or remontage and finished off with a slow horizontal press. As is the cases with most Chahut et Prodiges, there is no fining, filtration, and only 2 grams of SO2 are added when bottling in difficult years. 2,500 to 3,000 bottles produced.
