Rey Arellanes Angeles, or as some call him, “El Doctor,” is one of the few mezcaleros who produces the spirit with virtually no traces of modernity - the agave is mashed by hand, then distilled in clay pot stills; even though he has the means to buy metal stills and tahonas, he staunchly keeps it old school, insisting that the final product speaks for itself.
