Story

Cidermaker, Bitxino Aphaule, applies his experience as a winemaker to the craft of growing apples for cider paying close attention to the soils, exposures, tree age and choice of varietals. The Basa Juan cider is inspired by the "Wild Man" myths of the Spanish Basque with minimal RS and no dosage. Each of the different apple varietals are fermented separately with indigenous yeast for 6 months. Bottled aged for 3 months before release. Mild carbonation occurs naturally in bottle, no dosage. There is 10g/L of residual sugar.
